Dangerously Yummy Cajun Chicken Pasta



Cajun Chicken Pasta is my favorite pasta dish ever! However, to get the yummy flavor in this dish you have to use heavy whipping cream. No low fat version for me. I have tried to get a good flavor without the whipping cream and I have yet to succeed. I make this no more than once a year due to the fat content, so if you have a wonderful low fat version please send me the recipe! :)






Dangerously Yummy Cajun Chicken Pasta






box of penne pasta (whole wheat works well as it will be drenched in sauce)



3T butter



1T flour



1 pint of heavy whipping cream



1/2 cut (at least) of grated Parmesan cheese



1 lb chicken breast



Cajun seasoning (amount depending on how spicy you like it)



2 cans of diced tomatoes or fresh diced tomatoes






Cook and drain pasta according to package.






Melt butter in sauce pan over medium heat. Whisk in flour. Add heavy whipping cream and heat till boiling. Let it simmer to thicken a bit.






Take sauce off of heat and mix in cheese. Pour into pasta and mix well.






Cut chicken into bite sized pieces and cook in a skillet with a bit of butter. When the chicken is cooked put the tomatoes in the skillet for a minute to heat up.






Pour the chicken and tomatoes into the pasta and mix well.






Now you are free to add in Cajun seasoning. Just a little at a time and taste as you go. You might want to serve the kiddos some pasta first, and then add in the spice the way that you like.
